Vegetable Paella

It would be fair to say that it's difficult to justify calling this paella, but it's vegan. You can make this in one pot.

I made this for a party, so you'll have to excuse the crude arrangement for the photo.

Ingredients

  • 45mL sunflower oil (~41g)
  • 2 yellow onion (~350g)
  • 2 cloves garlic (~12g)
  • 3g ground turmeric
  • 450g bomba paella rice
  • 150mL dry, white wine (~150g)
  • 900mL water (~900g)
  • 1 very low salt vegetable stock cube (~10g)
  • 4g salt
  • 2g unrefined caster sugar
  • 2tsp lemon juice (~10.3g)
  • 200g tenderstem broccoli
  • 1 yellow, sweet pepper (~120g)
  • 200g cherry tomatoes
  • 200g frozen petit pois

Method

  1. Heat the oil in a shallow pan that can be covered
  2. Dice the onions and fry for 5 minutes or so
  3. Add the garlic and turmeric and fry while stirring for a further 2 minutes
  4. Rinse the rice under the cold water tap, drain and then add to the pan
  5. Stir the rice to coat for about 1 minute
  6. Add the white wine and allow it to boil down to about half its volume
  7. Add the water, crumbled stock cube, salt, sugar and lemon juice.
  8. Cover and start to bring to the boil
  9. Meanwhile, wash and tail the tenderstem broccoli if necessary and then cut in half
  10. Wash and de-seed the pepper, then chop into penny sized pieces
  11. Wash and halve the tomatoes
  12. Stir the pan well once at the boil, then add all of the vegetables and don't stir it again
  13. Cook on a low temperature for 10 to 15 minutes until the rice is cooked

If you're fancy enough to have saffron lying around then omit the turmeric and use a suitable amount of saffron instead. The turmeric is good enough and putting it in at the frying stage helps prevent it from affecting the taste of the dish.

The leftovers were also good for re-frying the next day - be sure to follow safe rice preparation and storage techniques.
