Pistacchio Courgette Pizza

This is a tomato-less pizza, with pistachio "pesto"-style base, topped with courgette and red onion.

I love pistachio nuts, especially that they're kind of in between sweet and savoury. I hate having to shell them though, so when I saw ready-shelled pistachios at my local supermarket, I jumped at the opportunity to make something with them. I think the best pizzas are savoury, with a sweet element, so they're a perfect match.

Ingredients

  • 200g strong white flour
  • 120mL water (~120g)
  • 25mL olive oil (~22.8g)
  • 4g easy bake yeast
  • 2g salt
  • 20g pistachios
  • 8g fresh basil
  • 4g fresh parsley
  • 2 cloves garlic (~12g)
  • 1 red onions (~175g)
  • ½ courgette (zucchini) (~80g)

Method

  1. Combine the flour, water, 10mL oil, yeast and salt and knead into a ball of dough.
  2. Preheat oven to 210°C (410°F)
  3. Place the pistachios (after removing shells), peeled garlic, basil, parsley, 15mL oil and about 15mL water (15mL = 1 tbsp) into a blender/grinder and make a pesto-like paste.
  4. Roll the dough out into a base with a diameter of approximately 30cm (12") or a rectangle of similar size
  5. Place the pizza base onto a lightly oiled tray
  6. Spread the pistachio pesto onto the pizza base.
  7. Chop the onions into half rings and distribute across the pizza
  8. Slice the courgette thinly (no more than 4mm thick) and place all over the pizza
  9. Spray pizza lightly all over with olive oil
  10. Bake for 12 to 20 minutes at 210°C (410°F)

If you have it, I recommend replacing the strong white flour with 00 flour instead. I use them interchangeably depending on what I have in the cupboard, but I think 00 flour makes a better base.
