Pane al Cioccolato

Pane al cioccolato (or sometimes pane al cacao) is an Italian chocolate bread, perfect for breakfast alongside a mug of good black coffee

  • 500g 00 flour
  • 10g cacao powder
  • 20g unrefined caster sugar
  • 5g easy bake yeast
  • 300mL water (~300g)
  • 80mL sunflower oil (~72.8g)
  • 100g dark chocolate chunks


  1. Combine the flour, cacao, sugar and yeast - mix well
  2. Add the water and oil, mix and then knead into a smooth dough
  3. Add the chunks of chocolate and fold into the dough
  4. Leave to rise for about 2 hours
  5. Preheat oven to 230°C
  6. Transfer onto a lightly floured or greased tray and allow to rise for a further half an hour or so.
  7. Bake for 15 minutes at 230°C (450°F) then reduce the temperature to 180°C (360°F) and bake for another 15 to 25 minutes.
  8. Allow to cool fully before slicing.

This recipe also works nicely with brown sugar, which adds a little something to the taste. This bread is entirely unsalted and this may not be to everyone's taste. The chocolate chunks can also be substituted for raisins for something a bit different.

To develop the flavour of this bread further, it can be cold fermented overnight instead of being left to rise for 2 hours.
