This recipe also works nicely with brown sugar, which adds a little something to the taste. This bread is entirely unsalted and this may not be to everyone's taste. The chocolate chunks can also be substituted for raisins for something a bit different.
To develop the flavour of this bread further, it can be cold fermented overnight instead of being left to rise for 2 hours.
