Rösti is a traditional Swiss breakfast made of grated potatoes. They're perfect for Saturday mornings when you feel you need potatoes but want something healthier than you'd find in a fried breakfast. Although röstis are usually made by boiling and frying, this recipe using the oven is easier.

I think that the perfect rösti is one where the potato is cooked, but only just - this gives the best taste and texture. For a healthy breakfast, I like to serve these on a bed of steam wilted spinach. It's a shame to mask the flavour of the potatoes, but a sprinkle of paprika on top with some avocado is a great twist as well.
To speed the process up in the morning, everything up to and including the shaping can be done the day before and kept in the fridge until morning.
