Oven Röstis

Rösti is a traditional Swiss breakfast made of grated potatoes. They're perfect for Saturday mornings when you feel you need potatoes but want something healthier than you'd find in a fried breakfast. Although röstis are usually made by boiling and frying, this recipe using the oven is easier.

  • 700g potato
  • 30mL sunflower oil (~27.3g)
  • 1 dash ground black pepper (~0.25g)
  • 2g salt


  1. Preheat the oven to 200°C
  2. Wash the potatoes and pierce
  3. Bake the potatoes for 20 minutes - this is not intended to cook the potatoes fully
  4. Remove the potatoes from the oven and cool rapidly in a bowl of cold water (takes a couple of minutes immersed).
  5. Grate the potatoes, discarding any large bits of skin
  6. Mix in the sunflower oil and black pepper
  7. Shape into about 8 röstis and place on a non-stick tray, sprinkle with salt
  8. Bake for another 10 to 15 minutes, depending on how well cooked you like the potatoes to be
  9. Serve while warm

I think that the perfect rösti is one where the potato is cooked, but only just - this gives the best taste and texture. For a healthy breakfast, I like to serve these on a bed of steam wilted spinach. It's a shame to mask the flavour of the potatoes, but a sprinkle of paprika on top with some avocado is a great twist as well.

To speed the process up in the morning, everything up to and including the shaping can be done the day before and kept in the fridge until morning.
