Apple and Polenta Bread Pudding

This bread pudding is my vegan take on an Italian/Sammarinese cake called bustrengo. It's a lovely blend of apple, polenta, breadcrumbs and dried fruit.

Ingredients

  • 5 eating apples (~600g)
  • 100g dates, chopped, dried and pitted
  • 100g sultanas
  • 2 lemons' worth lemon zest (~20g)
  • 2 oranges' worth orange zest (~26g)
  • 200g self raising white flour
  • 100g fine polenta
  • 125g breadcrumbs
  • 12g canderel green (stevia), 1g sweetner ≈ 10g sugar
  • 2g salt
  • 1g ground cinnamon
  • 500g plain soya yogurt
  • 65g maple syrup
  • 50mL water (~50g)
  • 65mL olive oil (~59.3g)
  • 6g unrefined caster sugar

Method

  1. Preheat the oven to 180ºC (356ºF)
  2. Peel, core and chop the apples and place in a mixing bowl
  3. Weigh the dates and sultanas into the mixing bowl
  4. Zest the lemons and oranges
  5. Weigh the flour, polenta, breadcrumbs, sweetener, salt and cinnamon into another mixing bowl and stir.
  6. Add the yogurt, maple syrup, olive oil and water and stir into a stiff batter
  7. Pour the batter over the fruit in the other bowl and mix thoroughly with a wooden spoon.
  8. Spread the mix out on a tray or in a cake tin with a diameter of 30cm (12") - grease and line first
  9. Bake for 45 to 50 minutes, cover with foil if it begins to burn towards the end.
  10. Sprinkle the sugar on top as it cools.

Of course, it's quite different to authentic bustrengo because so many important ingredients of bustrengo aren't suitable for vegans. I've also replaced the figs with dates because fig pollination kinda freaks me out.

This recipe was inspired by Jamie Oliver's non-vegan version, but as you can see this is quite a different recipe.
